Bowling for Hogs and Sausage

Chop-Rite #12 ready to go

Almost a year ago I decided I needed to know how to make homemade  sausage – just because.  You know back in the day sausage was a way to make use of less desirable cuts of meats and the trimmings.  Plus, if it was properly  cured and smoked the  shelf life was substantially increased.  Products like summer sausage are shelf stable with no refrigeration but be advised,  old time ways use simple equipment and plenty of knuckle busting hard labor.

The equipment I decided on was a Chop-Rite #12 grinder which is a Made in the

A Puckerbrush Adios

At the Secret Hideout

A few years back, maybe 2014 or so,  I predicted 12 hour guard shacks would one day replace the couple working out of their RV onsite.  Seems like I  was right.   Local residents and single folks paying to stay in RV parks filled the ranks.  Oh, there is still (some) demand for RVs onsite and I am sure some Winter Texans this winter will find positions.  The unsettling trend I am seeing now is security companies working their guards out of their personal vehicles for a 12hr shift.  Used to be, this setup was reserved for

Shangri-La?

NO Princess Palace on station. Spring 2017, McMullen County, Texas

17 days straight of 100+ degree temps before a little front broke it and we got a teacup full of rain. No matter and not surprising,  I have survived worse. It has been 6 weeks since I made a trip to the grocery store – or any store for that matter.  The dry pantry is holding up good and the baby Danby Chest Freezer  is still givin’ up goodies like the package of pulled pork I took out of there last night. When it was in the microwave it smelled just

Puckerbrush Preps

OK, confession time. Less than a decade ago my pantry was thin and my teeny RV freezer was chock full of Lean Cuisines, Hungry Man dinners,  State Fair Corn Dogs and Heat’n’Eat Hot Wings.  I didn’t own a water bottle because I drank a 12 pack of unleaded Pepsi every day.  A microwave was indispensable because – frozen dinner.  I distinctly remember buying Hungry Man’s  because it screamed out on the package they contained 2.5 lbs of food.  Mebbe not good and healthy food but Jesus H. Christ  -2.5 lbs of food!!!  How could you go wrong? The RV freezer
